Description
From the Norcina tradition born of the peasant world, the “mezzetta” salami comes back, produced with all the cuts of the pig, including the noblest parts (thighs, lonnies, fillets): just as when, in season, they rotated in the farms of the Piemonte camps to carry out this nearly-extinct ritual – the slaughter of pigs bred throughout the year in the yard. Pigs reserved for the production of a premium brand, come exclusively from family farms immersed in the greenery of the Cuneian valleys.
Unlike pigs bred in fixed shelter, which do not have open spaces and are often forced to breathe the miasms that develop within the stable, here the pigs live outdoors, thus benefiting from pure air and grazing between stains of vegetation, sunny meadows and undergrowth. Precisely because they are free to move “comfortably” (hence the name), they also give mature meat, boiled, with less fat and a lower moisture content.
Just like once, open-air bovines, moving freely within the bush, nourish what nature and undergrowth offer them spontaneously (acorns, chestnuts, roots, grass …). However, to ensure full animal welfare and to ensure the right nutrition, nutrition is integrated – according to the parameters of a complete and balanced diet – with UNI ISO 22001 certified vegetable feeds “no ogm” (neither containing nor deriving from genetically modified corn or soy) and free of both added animal fat and animal meal.
